CORNFLAKE CRUSTED FRENCH TOAST

Inspired by one of my favourite spots in Los Angeles, Blu Jam, I treated a few friends to a homemade version of the popular cornflake crusted french toast.  I'm not claiming it even came close, but it was a pretty successful homey breakfast with a twist.  Boozy brunches is definitely my ultimate past time.  This time, I paired the meal with a Pineapple-Malibu fruit punch.  

This is an easy go-to recipe if you're hosting something casual this summer time.  Alternate the recipe to your liking by mixing and exchanging toppings with berries, syrups, etc.

INGREDIENTS

 

Serves 4

WHOLEMEAL BREAD

CORNFLAKES

3 EGGS

1 CUP WHOLE MILK

2-3 BANANAS

BUTTER

3 TBSP SUGAR

ICING SUGAR & BROWN SUGAR

HOW TO

  1. Preheat oven to 375 degrees Farenheit.
  2. Prep crushed cornflakes into a bowl and slice bread into desired portions
  3. In another bowl, combine and whisk eggs, milk, sugar, and cinnamon powder 
  4. Generously drench bread in egg mixture then carefully coat with crushed cornflakes
  5. Heat up a nonstick pan and melt knobs of butter.  Place bread onto pan until golden brown, attentively flipping sides as cornflakes may burn easily 
  6. Finish off in the oven on a tray with baking paper.  Cook through, about 10-15 minutes.
  7. Serve with sprinkles of icing sugar and cinnamon powder
  8. Optional: Top with fried bananas.  Add brown sugar and butter onto a hot pan before placing banana slices.  An extra option would be to flambe bananas with a touch of brandy.

BRUNCH WITH DI | HOMEMADE HASH BROWNS

INGREDIENTS

 

 

5 POTATOES

1 ONION

EGGS

CAYENNE PEPPER

SALT & PEPPER

OLIVE OIL

BUTTER

BACON

HOW TO

  1. Skin and grate potatoes and onion.
  2. Squeeze out as much natural moisture from the potatoes (less moisture means crunchier hash browns).
  3. Season with salt, pepper, cayenne pepper.  And drizzle with olive oil.  Mix well.
  4. Onto a hot pan, drizzle a generous amount of olive oil and add the potato-onion mixture.  And flatten into shape.
  5. Add knobs of butter around the pan.
  6. Prepare to flip hash brown once the bottom firms.
  7. Make indentations to where you would like to crack the eggs.  Season with cayenne pepper.
  8. In a preheated oven of 200°C, place pan in oven.  Remove pan when eggs are over medium cooked (approx. 8 minutes).

Add 1 tablespoon of brown sugar and a knob of butter onto hot pan before placing bacon in.  Remove bacon when desired crunchiness level is achieved.
